I can see a specific organization has access to X number of projects, but there doesn't appear to be a way to see which projects those are. I've searched even at the API level and cannot find how to identify which projects a customer organization has access to. I'd think this would be important to make sure they are being assigned to the correct projects.

Permissions on projects are not granted to organisations. Access to a project is granted by assigning users or user groups to roles - when you talk about customers, that would be the Service Desk Customers role.
Organisations are used to create visibility of issues raised by individual customers with members of the same (company, department, team, group, ...) - but members of an organisation must first of all be granted access to the project before sharing requests witht their organisation has any effect.

Sorry that is not at all what I am asking. I simply need a way to see what projects a specific customer organization has been assigned to. I can see how many projects when I assign the organization to a new project, or when looking at the organizations page, but there is no where I can see all the projects a specific organization has been added to.
In addition, following up on what you pointed out, if I go to the customer user who has customer access to multiple projects via the Service Desk Customer role, and I go to "View Jira Project Roles", there are none listed. So there is no way currently to my knowledge to see what projects a customer user has access to.

No, and I can understand that is not what you are asking. I took a few shortcuts in my explanation indeed. I was just trying to point out that there is no direct link between organisations and access to projects.
Organisations are centrally managed. As an admin, if you go to Site Admin > Products > Jira Service Management > Organizations, you can see all organisations listed. There even is a count of the number of projects it is used in, but - unfortunately - no listing of which projects these are. I am not aware of any other way to find out which projects they are, but to check the customer list of your service projects.
With regards to your last comment on the customer roles - that may indeed be the case. Access to your projects in JSM can be set up in many different ways. You can choose to only grant access to users you specifically assign to the project (and in that case you should see users linked to the customer role I mentioned earlier), but you can also choose to let all internal users access your project; or users belonging to a certain email domain; or you can even open it up to the public on the internet. And indeed, in those cases you don't assign people to those roles.

Thank you Walter, do you know if there is anything in the pipeline to offer this ability in the future? Seems like a large gap in design, if there is an enhancement request already pending investigation, I'd love to weigh in my vote for it!!
