We are using the Free Plan of Jira Service Management. To edit the customer notifications, is it enough to upgrade to the Standard Plan or do we need the Premium Plan?

We can't. We get the following message. Its in Spanish and says "Templates cannot be edited with a Free plan. Improve your plan". See attachment.
Hi @Mario Gran , are you not able to edit the notifications in your current free plan? You should be able to do so under project settings > customer notifications and click "edit" on the desired notification event.
