I am using a Next-gen HR service desk project. I would like to have a process set up so that when a person submits a onboarding request, it will automatically trigger tasks to be created for the IT team to complete. There will be 8-10 tasks that need to be completed by different people. Is there any way to make this happen?
You would be able to do this using Project Automation - just go to your Project Settlings, then Apps, then Project Automation to get to this section.

Could you give me an example of what the automation would like like so that it only targets the onboarding request type coming in? These are the only options I am seeing.

That is the Automation section, if you scroll down to Apps then Project Automation you'll get a whole new section of automation options

That is perfect! I still have one glitch, it doesn't like my request type condition. I have tested it using a different condition (creator=) and it works. Any ideas of what the problem may be?

I finally figured it out that the issue type = Employee Onboarding instead of request type. Thank you for all your help!

I'm glad you've solved the issue. The Project Automation is really powerful, so if you're having a slow day it's great to play around with and see what else it can do for you.
