From the screenshot you shared, you can only change the prefix of the default email from there. eg: from jira@seaker.atlassian.net to support@seaker.atlassian.net
If you want to setup a custom email address, you will have to add your email domain, after Atlassian verifies your domain, you can specify the email addresses that you want to use for your product notifications. Please refer - What are the steps for setting up custom email addresses? for detailed steps.
