Where does the Jira get the information from (the first part) in notifications so I can change this...

It takes it from the list of people that the issue has been shared with - usually a close match to the "participants" on the request.

Thanks Nic, can this be removed or changed as none of it matches the "participants" and usually get asked who they are?
