I'm trying to create a Widget to show how many open or closed tickets each "Organization" has in our project. I created a filter with all of these issues, but when I go to add an issue statistics widget to the dashboard, I can't use Organizations as the Statistic Type.
I tried creating a custom field and automating a rule to copy the value of the Organizations field into the custom field, but the custom field also does not appear in the Statistic Type dropdown. I checked and it does have a search field, so I am not sure what's going wrong here or what this custom field is missing.
If anyone has any ideas how to make the custom field appear in this selection or how to use the Organizations field, it would be much appreciated!

Unfortunately, this field is not available to be used in Jira out-of-the-box gadgets. But if you are open to try a marketplace solution, I recommend Mindpro Insights. I work at Mindpro and this app was developed to be simple and easy to use, so any person can create and share dashboards.
Just to illustrate with a simple example, I created a dashboard with a mix of pre-loaded and custom gadgets. I added a 2d-table gadget using organization and issue status, so the system can show the information similar to what you described, with totals per row and columns:
The gadgets in internal dashboards are interactive, so if you click on each chart segment, the system will adapt the entire dashboard to accommodate your filter. The custom gadgets are also available to be added to Jira Standard dashboards, if you prefer.

Indeed, the Organizations field is not supported by the Jira's native gadgets. A solution would be to search for a plugin on Atlassian Marketplace that offers such gadget.
In case you want to use a plugin, our Great Gadgets app offers a Pivot Table & Pivot Chart gadget that supports this field. By using this gadget you can create all kind of statistics and charts based on Organisations field.
To get this, the chart should be configured like this:

Thank you! Looks like a lot of people agree that this would be very useful. I've voted on those issues :)
But for now, I would need to find a workaround for this. As I mentioned, I tried to make a custom field and copy the Organizations value into that field, but for some reason that custom field is also not available. Any ideas on why or any other workarounds you can think of?

@nmaydanyuk , if you are using a text custom field that would not be an option as a statistic. You could consider a single select field but that does mean more hands-on effort with automation as organizations are added/removed.
