My collaborators can't automatically see my customers tickets, only their own. How can I set my collaborator, Jane, to see customer X, Y, and Z's tickets as they come in?

What exactly do you mean by "automatically see my customers tickets"?
If you need your collaborators to see new tickets you could create a filter for that and use the filter results gadget on their dashboard.
