Jira admin role and course to help me begin with

I want to create project which will give me how many demands are created and what supply we have for the open demands one issue type once the supply another issue type is evaluated we should have a resource ticket created which will get all the details of the resource  these all should have some kind of automation connected  all these issue type should have there own screen with custom fields and workflow different scheme should be there where can I learn all this step by step
