I am looking for generic Atlassian video training that goes over the Incident Management and the Change Management modules within Jira Service Management.

Atlassian offers several training paths on their university platform. Two courses stick out to me - Introduction to ITSM and Jira Service Management Fundamentals.

Outside that there are additional resources you could look at - Incident Management and Change Management.
