Is there a way to edit/update this field on JSM?
We are trying to create a flow, and it seems that this one is not showing on the field results.

No, you can't edit that field - it is only available to Agents when they are creating an issue for themselves or on behalf of another person/user/customer.
The field is "Assignee".
And as @John Funk said, you need a specific project permission to be able to edit it on a request form.

Sorry, but this is wrong. This field is the issue reporter, not the assignee.
It automatically defaults to the currentUser for none agent users.
