We want to add Flags to Jira Service Management issues to easily note items that are blocked because of known Atlassian issues. I know we can do this with a new workflow status, but for us, that isn't ideal. We'd prefer to do a flag and then be able to remove these issues from our KPIs.
We haven't been able to find a way to do it. We've tried adding the "Flagged" field to the issue types, but that field doesn't show up in the view.

I would suggest using components and then adjusting your view to display them and by view I am assuming you mean queues.

I actually meant Issue Layout. I like using the Flag method, as done in Jira Software, as when an issue is flagged it changes color in the backlog. I was hoping to do something similar for Service Management queues.

I was just investigating this. You can use the "Flagged" field to make issues show a flag when looking at them, but this is just "Impediment" on the JSM queue.
You could create a "Flag" checkbox field with a flag emoji: 🚩. I use an automation like this to manage them:
