I created a custom field with "Select List (single choice)" type. Is it possible to automatically set a Priority depending on their choice in the dropdown?

You could accomplish this using an automation rule:
Trigger: Field Value Changed (Issue)
Condition If/Else Block
Condition #1 - Issue Fields Condition (If Issue = Computer not turning on)
Action #1 - Set Priority field to value
Condition #2 - Issue Fields Condition (If Issue = Faulty Keyboard)
Action #2 - Set Priority field to value
Condition #3 - Issue Fields Condition (If Issue = Faulty Mouse)
Action #3 - Set Priority field to value
