Is there a log or a notification to admin to figure what emails failed to convert into tickets? How does one understand this is happening without reaching out to support?

Have you configured Email Requests in the project settings?
(Project Settings -> Email Requests)
From there you can connect the email account you want to use to receive email requests.
Logs can be viewed from there also under "View logs".
