This has been asked before (https://community.atlassian.com/t5/Jira-Service-Desk-questions/Can-t-create-a-Service-Desk-Project/qaq-p/594968) two years ago. That was for a server online.
I am using the cloud version of Jira Software and Jira Service Desk. When I try to create a new project, it automatically creates a new Jira Project.
Try clicking the change template button on the left side. I can see your Cloud site does have Service Desk, so provided your account is a site admin, you should see options such as IT service desk or Internal service desk to be able to create a new project in service desk.
This window operates a bit differently than the Jira Server platform when creating new projects, but you should be able to select one of those templates to create this kind of project.

Thank you very much. That solved my problem.
If I may, here's a suggestion: the change template button seems to mean 'click this to change (alter) the kanban template'. IMHO it does not seem, to a first time user, a way to select another template.
Also, I thought Kanban's alternative was scrum. It did not see it in a category of project types that include service desk project, software project e.t.c. It might help new users if the items in that categorization where somehow communicated as part of the automated introduction or if the screen above (with 'select template') communicated that. My two cents ....

Thanks for the feedback here. I tend to agree with you that this button's current text could be easily misunderstood as to its intended function. So to attempt to remedy this problem, I created a suggestion for this problem over in JRACLOUD-73249.
I am not certain that this change will be implemented into Jira Cloud in the future, however it is possible that it might. If it is, I would expect this ticket to be updated to reflect this. Just so you know, any user with an account can create these kinds of suggestions as well.

Although that of next-gen has an extra field for access level. In either case, no option to select type - whether software project or business project or service desk project.
I wonder if it matters that I'm using the 1 week trial. I know it shouldn't.

Are you choosing Next-gen or Classic? What do you get asked after selecting one of the two?
