We planning to remove one of the accounts from Jira but need to check if he is still involved somewhere so that after his deletion no work would be blocked (automations, filters, etc.)
Is ther a way to check Activity log of one account in Jira to see all the places he is located in Jira?

You can configure the "activity stream" gadget for the user on your dashboard.
Or you can filter his activity through JQL: "issuekey in updatedby("<user>", "<when>", see https://jira.atlassian.com/browse/JRACLOUD-73671.

I see that I can configure regular Gadget which is called Activity Stream, but then, in filters I have a line per project and I need to check a person's activity stream throughout all projects in our company Jira.

Vera, you can use the + and - buttons at the end of the line to add/remove a filter. Removing the project line, and adding the user (account) worked for me.

You have an Audit log under Settings -> System
there you can filter out according to user.
