How do we change which users tickets are being automatically assigned to? I have changed the default assignee but tickets are still being assigned to a different user.

Are you talking about automatically assigning the tickets when they are initially created?
There are multiple ways in which a ticket can get assigned:
- Using the Default Assignee specified in the Project Settings / Details page
- Setting the assignee based on the Component(s) set on the issue when it is created
- Setting the assignee using a post function in the workflow.
- Setting the assignee using Automation Rules.
Review the History information for the issue and examine what it documents for setting the Assignee field. If it is not clear from that how the Assignee got set to its current value, you can share screen images of that information with us and we can perhaps help you identify what happened. Of course you should obscure any confidential information in those images, as this is a publicly accessible forum.
