The display of the status is controlled by the status category the status is in. Go to Admin -> Issues -> Status and edit the status, selecting the right category for each.
But you can’t actually change the color of the category correct? That is, To do category will always be grey, in progress will always be blue done will always be green.
I was thinking that @Jimmy Trivedi was wanting to change that but I may be mistaken.

And can I create extra status categories with different colors and then map my statuses to that categories so that I'll get categories colors in statuses?

Unfortunately you cannot add any status categories it is fixed at the three and those colors associated with those categories are fixed as well.

It is irritating that coloured statuses are available within Confluence but not Jira/Service Desk.

A (Jira) status is a visualisation of where an issue is in a Jira workflow, and is colourised in there to match the status category of the status.
A (Confluence) status is a (Confluence) bit of data rendered for the viewer in Confluence as part of the body of the text.
They're two independent things, with different reasons to exist.
