If I would like to add some participants in the ticket (e.g. reporters manager).
It doesn't allow me to type email address, I need to pick user...
and also is there a custom field which will allow customer to write email of his manager to be added to ticket?
I know you can add it later when you open it and then click "Share +" but is it possible to add as a field during request form?

The request participants field is a special JSM field that you cannot add to the request form. It's availability on the form is based on the project's customer sharing settings.
On the portal the field looks like this:
