How to add additional ticket Status?

I would like to add in an additional Status of 'Deferred' so that I can park particular requests under that Status. I can't see where I can do this - can you help please.

If you are an admin go to project settings > workflow and edit the desired workflow and add the new status. Add in you transitions as desired or simply use the “All” transition.
