My customer is not planning to use the Organization field at this time and it displays automatically on the intake.
How can I hide and/or remove it?

The Organization field is displayed when the project has an organization created and the user in question is present in that organization.
Check the following:
Open your project and click on Customers, you should be able to see the organizations created for that project.
If the 'Organizations' field is displayed on the user's portal, it means that they are within an organization. If you do not want the Organizations field to be displayed, you need to delete all organizations. There is no way to 'hide' this field unless the project does not have any organization or if no organization created has a user.

Even ensuring that no organizations are added in any of the JSM projects in an instance and the Org/Customer feature turned off, the 'Organization' field still appears.
This is verified with a brand new instance and creating a JSM project for the first time with Customers and Organization turned off, with no organization added. Organization field is still visible, with no option that I can find to remove or hide it.
