We are able to create a slack channel from the incident ticket using chat channel fields in Jira.
Once it is created, is there any way we can rename it?

I think that is mainly a Slack related question. Channels can be renamed by the workspace owner or an admin in Slack. If you have those permissions, open the channel - click on the edit icon next to the channel name, edit the name and save changes.
The idea of the automatically created channel name is - obviously - that it is easy to identify the channel as related to the incident.
