We are not using Slack anymore and thus we would like to hide the Slack Messages field in requests. How to do that?

Since your team has connected Slack to Jira, just uninstalling Slack is not an option. If you want the option to be removed, the only way is to disable slack integration.
To disable it:
Please note that only Jira Administrator can disable it.
That was also my idea, but it's already disabled and the field is still there.

I think this hiding 3rd-party app fields feature is not yet added to Jira.
