My project is in a company-managed environment. We are looking to set up some custom statuses that are only relevant to my project, not every project in my company.
Is there a way to do this?

Welcome to the community. In addition to what @Robert Wen mentioned, what you need to do essentially make sure the WF that you are customizing is only for your specific JSM project + the WF scheme that containing the WF is also only for your specific JSM project too.
To access the WF Scheme and WF, you will need to access Settings at the system level - Settings >> Issues
Then access the WF and WF scheme -
Finally applied the WF and/or WF Scheme to your specific JSM project after you have completed your customizations.
