Hello Gui,
For Service Desk projects, it's possible to add a custom email address as the sender email.
For that, it's necessary to verify a domain and then configure the domain's SPF and DKIM records.
After that, to change the project email, go to Project settings > Notifications (Classic) or Service Desk Settings > Notifications > Notification email (Next-gen).
