You can easily change this on the Jira screen itself.
Do the following:
Click on "Project Settings";
Go to "Screens";
Go to the issuetype and screen layout you want to change.
In the "Edit and view" screens, add the "Approvers" field.
Then go back to the issue in Jira and change the approver to the user you want.
If you are thinking of making this change differently, please provide more details :)
Thank you Fernando for your response. This doesn't look like what I want to do. The approvers field is already present; I can send an ITS to a person, say tom, to approve a request, but if I was mistaken and need to send the approve request to, say, 'mary,' I have to currently move the ticket to another project and then back to resubmit the request. Is there any way I can undo the approver choice once its submitted?

A suggestion that might work for you is to do the following:
Add an auto transition to your flow.
Click on the issuetype workflow;
Click "Add transition";
Select "From: Any status" > "To: Itself" options.
Give her a name.
Add a screen to this auto transition and include the "Approver" field on it.
Publish these changes.
This function will appear on the right side of the "Status" field in jira.
So even if you send to the wrong approver, you can click this auto transition and change the approver, without having to redo the process you described.
