I have a number of asset objects setup in Jira and I want to change the attributes from Default/Text to Object/(link to metadata). Is it possible?

I guess you will have to create new attributes with the correct type, populate them (with an import), and remove the old attributes.

Yes, it’s possible to change the attribute type in Jira Assets (formerly Insight), but there are a few considerations to keep in mind.
Unfortunately, you can’t directly change an existing attribute’s type (e.g., from Default/Text to Object). Instead, you’ll need to create a new attribute with the desired type.
To move your existing data to the new attribute:
Ensure that the new attribute is properly configured to reference the correct objects and metadata. Once the migration is complete and verified, you can delete or archive the old attribute to avoid confusion.

You can not change the data type of the asset attribute if that field already has values stored in it. There are two ways you are achieve to change the data type of the asset asset attribute.
1. Clear all the values from the current default/text field, then the system will allow you change the datatype of the field.
2. Create a new asset attribute with the desired data type.
