I use canned responses via the desktop version but cant find a way of adding canned responses to customer replies via the app which I am seeking to use.

As far as I know, native canned responses are not supported in the mobile Jira app.
There is an open request for this, you can vote for, see; JSDCLOUD-13153
Hi @Michelle Martin welcome to the community! Unfortunately, at this time, canned responses are not available in the mobile app.
I did find JSDCLOUD-13153 on Atlassian's Jira Site where it was requested to add this functionality to the app. I could see where this would be useful for agents to have this capability.
I would suggest voting for and watching it for future updates. Putting a comment in it with your use case would be valuable as well.
