Hi community,
The question is if a Forge app can give a possibility to hide native UI elements one way or another, using some allowed methods or simply adding some corresponding CSS or Javascript.
In particular, we need to hide the 'Share with' dropdown related to the organizations from the Create request view (and I'm aware of the possible existing ways to hide it, but those don't work for me ;)
I'm new to Forge, so any feedback will be much appreciated.

I have noticed a few suggestions before I respond here. I would like to contribute by mentioning that it is not possible to use CSS to modify the appearance of the portal in this Cloud App. There was a similar feature request that has since been closed as "won't do":
To the best of my knowledge, CSS and JavaScript can be used with Server and Data Center platforms. However, I've observed that you are utilizing Atlassian Forge, a Cloud-based development platform. Question for you on why you want to create custom process via FORGE to customize the out of the box portal request type UI?
You know that you can configure (out of the box) the request type configuration for your projects to include or exclude any field for the customers to fill in when he/she submits their issues.
Please advise, so we can assist further.

Yes, I know of out of the box capabilities, that's why I want to hide this button, as it can't be actually customized in a request form (unless users/organizations/sharing settings are modified)

Unfortunately, I am not aware it can be done programmatically or out ot the box at this time. There is an outstanding enhancemetn ask - https://jira.atlassian.com/browse/JSDCLOUD-7057. I would recommend you to add yourself as a watch on it to receive any updates from Atlassian.
