Today we had a problem: some of our tasks disappeared. Nobody could have done it, and in history it wasn’t recorded. What can we do, maybe there were some technical issues?

There's no technical issues that could have lead to data loss (if there had been, Atlassian would have notified you).
I'm afraid the only option is that one of your people deleted the issues. (Or possibly an Automation, but they have to be created by admins)
