Automation - how to fetch the email id of the user @mentioned in comments

Are you sure this is necessary?

Users already receive notifications for mentions; however, this can be disabled in their profile settings: https://support.atlassian.com/jira-software-cloud/docs/manage-your-jira-personal-settings/

As for emails, in Cloud, users can make their email addresses private. This means there’s no direct access to their email addresses, and even apps cannot fetch them without special permissions: https://developer.atlassian.com/cloud/jira/platform/profile-visibility/#forge-apps
