what are the possibilities of selecting a user from a dropdown list in the portal (JSM Cloud) and automatically populating additional fields like Organization or Supervisor?
This can't be done in the portal.
You could do this by using an automation rules that sets the information based on the input in the user field
Jira can't provide additional information in an issue that does not exist yet.

We use the Entra ID app. As soon as an issue is created, all relevant data is displayed in the corresponding request.

I expect Assets is used then or what doe the app do, can you provide the name of the app?
This in combination with custom fields of the type assets with configuration.
Are there other automations active on the project, because its logical that these are providing this setting of information?
But still the issue has to exist, on the portal you or a customer is creating an issue, fields can be depended to provide information based on the information provided in another field.
So limiting the options of a second field, but not automated.

I have already contacted the manufacturer, but it is definitely not possible in the portal, when the author is selected, for other fields to be written automatically.
