Is it possible for the customer/requester to see to whom the ticket is assigned?
In addition to what @Alex Koxaras _Relational_ and @Charlie _DEISER_ said, you can also try our Feature Bundle. It's a free app for up to 10 users.
You could also use Automation to add a public comment with the current assignee in the comment body.
Out of the box unfortunately you can't do this. Even if you place the assignee as a field for the client to fill, this field will be hidden. A 3rd party app could possibly do this job for you. For this we have used an app called "Extension for Jira Service Management" in the marketplace (Display Additional Details - Extension for Jira Service Management (deviniti.com)), this app will allow you to share more info with your customers and extend the portal functionality.
