We use JSM for support to several customer.
One customer per project and up til now, only email addresses added by admin can send issues/use portal.
But we now have the need to set up one project so that all email addresses from a certain domain can send issues/use portal.
How to do that without “disturbing” setup in other projects?

Thank you for your question.
Unfortunately, it looks like this isn't possible. Customer acces settings are per site settings and changing those will affect all your service projects.
You could ask the customer for a list of address and create those accounts prior to going live. If it are a lot of accounts, I would advice using the API to handle the creation.
Another way is to open up the service projects and create an automation to filter out the unwanted emails on a per project basis. You can check if a reporter is a member of an organization and decide on how to act based on the result.
