I would like to add "Priority" as a column to ticketing queues

When I look at "issues assigned to me" or "all issues" for example.  I would like to see the ticket priority as a column.

just add the column(s) you want to your filter results.

Please see attached image and atlassian link below. Click on column after you do your search, then check whichever field you want to add or remove.
