We want to customize the invitation email sent to a Service desk customers.

The screenshot I shared with you is from a cloud instance. I did not notice you are using the server-based version of JIRA Service Desk.
The option to customize the invitation email for customers is not available yet, but we have a suggestion to implement this:

Please leave your thoughts on this matter so that the developers can collect feedback on this feature for improvement. You should also vote on the ticket as the more vote a feature request has, the more traction it will gain. It's possible to edit the customer invite email, please follow the steps below to reach the edit page:
1. Log in with an administrator account.
2. Go to the project settings.
3. Go to customer notifications.
4. Click on "edit" on the "Customer invited" customer notification.
To change the email address that notifications are sent from, you have to configure the project's email address. Here an article that explains how to do this.

Regarding the invitation email, I followed the steps, but apparently for my installation, there is no "Customer invited". Please see also the screenshot below.
Moreover, how can I avoid getting the subject suffix (second bullet of my question)?
For the different from address part, I am ok.
