After changing my header image to a new one the old one doesn't go away, instead, it displays over the new one but is super small. It doesn't let me delete it or interact with it in any way.
In the image I've shared, you can see the old header image just below the new one.

If this is the Overview page of your space, then the smaller image is the space logo. I researched this topic when someone asked a similar question recently and concluded that there is no way to remove the space logo from the Overview page.
I'm not sure if using a custom emoji of a transparent (blank) image would work—if the emoji would be used instead of the space logo on the Overview page. If you try this and it works, please let us know. (Note: I think you still need to upload the custom emoji to the space somewhere else in order to be able to select it for the header—i.e., you won't be able to add a custom emoji while on the page header.)

Hi Barbara
Thank you for the welcomes, yeah I ended up going the custom emoji route however I didn't use a transparent image, I decided to use our logo as it really just looked a bit better.
Thank you for the help, really appreciate the support!
