Hi, cannot see any option to create new space based on template. I'm sure it was available before. It's also confirmed by official Confluence documentation. Now it disappeared and I cannot select only out of the box template.

This change was announced in this week's release notes:
We've simplified space creation
ROLLING OUT NEW THIS WEEK
With just two kinds of pre-set spaces, each made to suit a specific purpose, creating a space is easier than ever before. Choose between Knowledge base and Collaboration, add a description to the overview, and dive into content creation faster than ever before with one of our suggested templates. Or, if you know you want something really specific, choose Custom to manually configure the features and settings for your space.
To read about these changes in more detail, check out the Community post.
To create a space:
Select Create from the Confluence navigation bar at the top of the screen.
Select Space from the dropdown menu.
Choose the option that best fits the purpose of the space you're creating.
Confirm your choice, making changes to the defaults as needed.

Welcome to the community.
Seems this has changed, now create a blank space and choose the "page" template you require.

It's pity because there were whole space templates for all the space structure creation based in purpose. If it's true they haven't updated official documentation.

Hi @Aleksander Miler ,
what do you see when you create a new space? Below is what I see which guides you through the process.

I have the same view! As you can see there are no templates to select (like some time ago).

I believe it is there it is just re-factored into something that is arguably better (?). Now you have a wizard that walks you through a series of selections to zero into a template.
