We have tried updating a user's username from admin.atlassian.com but the changes are reverting back to earlier after 2 days

Can you please check this and resolve the issue?
Usernames are typically not relied on in the Cloud. Are you referring to the displayName of the user? If yes, probably you want to check if this user is managed or unmanaged. If it is the former, then changes need to be done from the identity provider since there's a sync between the identity provider and your organization.
As other user commented - first of all you need to check if your organization provision users via IdP - if this is true then all the changes to a user need to be started on the IdP side and then reflected in Atlassian.
