Our costumer ist wondering, if there is some kind of License Document, which is valid for the Maintenance period, after purchasing the License?
If not... is there a possibility to get such a thing?

I'm not sure what your customer is looking for when you say "licence document", but I'd start with https://www.atlassian.com/legal/customer-agreement
There's a whole load of links to other legal stuff to the left on that page too, as I'm not sure that's quite what they're looking for.

The licences are held in your my.Atlassian account, that's the only real evidence. If someone is worried about that going missing, then a screenshot of the list of licences would be all you really need to "prove" you have it.
