I've been a Halp/Assist user for a few months and since the recent migration to Atlassian it seems impossible to create an issue in Jira Software directly from Slack - and that now I first need to create issues in Jira Service Desk.
Is this correct? That this functionality has been removed to go from Slack > Jira Software?

Evn from Appfire here. I'm going to suggest our app, so leading with that disclaimer.
Unfortunately, Atlassian did remove this functionality from Halp/Assist. Your best bet at this point to regain that functionality is going to be an app. HelpDesk+ by Appfire replicates all of this functionality and more. Take a look at the Marketplace listing and let me know if you have any questions. I'd be happy to demo it.

Thanks Sanjong! the benefit of the Slack > Halp/Assist > Jira Software flow was the bi-directional sync and custom forms. Agreed, this flow you've highlighted does work, but removes the functionality we depended on and will require behavioural change.

First of all install Jira for Slack.
Then I did the following:-
