We want to convert our company-managed project to team managed projects.
It is an existing project with about 2500 issues and existing boards and workflows (and integration with Slack and Bitbucket). How can we convert this as easily as possible so that I can have better control over permissions within other team projects?

There is no "convert", you have to create a new project and move your issues from the old one into it. Make sure you set up the new project to include all the global fields the company-managed project has, and you'll need to manually rebuild all the workflows and integrations.
I would not do this, you say you want "better control over permissions", but I'm afraid the permissions in team-managed projects are nowhere near as granular or comprehensive as they are in company-managed projects, so you would actually be losing control over permissions by moving to team-managed.

What permission problem are you currently encountering, specifically?
Why do you think the move to a Team Managed project will help?
Additionally note that the agile board and workflow customization capabilities in Team Managed projects is not nearly as comprehensive as what is available for Company Managed projects. And, specifically with workflows, many third party apps that extended the Conditions, Validators, and Post Functions capabilities will not work at all in Team Managed projects.
