You will need to create a separate rule for each board where you want this functionality. Trello doesn't currently support a global rule across all boards, so setting it up individually is necessary.
You can set up a rule for each board using Automation (Trello's automation tool). Here's a basic rule you can use:
when a card is emailed into the board, remove the cover image from the card
This rule will automatically remove the cover image when a card is created via email.
Additionally, if you'd like to disable card covers for all cards on a board, you can do so from within the board menu > settings. By disabling card covers, no card on that board will display a cover image, which can help reduce visual clutter.
