is there a format to edit custom fields using email to board

like using the hash for #labelname to add label

is there a certain syntax to edit customer fields value based on Email sent to board

There is none as far as I know. 

However, you can use the email body to carry the key value pairs. You can use Butler wildcard or http request to do the splitting and set your custom fields. My client uses this to trigger work via email to board.
