If I'm working with a team on one main board but I don't want everyone to see all the cards, or all the lists is there a way for each team member to see only the cards I've assigned him to and not Everything?

Consider using external share. You can also use Hipporello Share Card power up or use their build to builder to customise on to your needs. What is good about the later is that it provides conversation, a portal and you dynamically custom what you want to share.
