how do I remove the quick add thing from Trello board selection page on Android? Is there a setting or is this something imposed on users without an opt out?
What you are seeing was an update recently done for the Trello app on Android. It's an experiment our dev team is doing and collect feedback about it. I'm afraid it can't be currently deactivated during the experiment period.
If you click on the add card button, you will see the option to share your feedback about it.
The dev team is collecting user feedback to see if that would be a useful feature to implement.

Currently there's no way to toggle the feature, there's a raised topic suggesting this as you can check on the link below

I have also added this ticket as an internal comment to this report so that way our engineering team can reference to it and also use it to help align priority. I would also recommend you to visit that suggestion, log in with your Atlassian account, and click Start watching this issue on the right panel. This will help our product and engineering team understand more about which functionalities our users are interested in. Also, when the ticket is updated by our product team, you'll be notified via email.

As a workaround, you can edit the 'default' Quick add board and list by simply selecting the pencil icon to edit the board and list you'd like to display under the Quick add option.
