Notifications for due dates are based on 'watching' either a board, a list that the card is on, or the card itself. Adding a user as a member of the card will automatically watch it. So if you don't want notifications for due dates, you need to not watch the board, list, or card. See more on that here https://help.trello.com/article/793-receiving-trello-notifications
