I would like to know if it's possible to lock the edition of the checklist. Just to prevent accidental exclusion.

Welcome to the community :) for the moment, Trello's permissions don't drill down to the field level - so there's no way to create granular permissions that restrict users from editing certain information within a card. If someone is a member of your board, they can edit all aspects of the board (unless you set board permissions around commenting on a card, or the ability to invite other members to a board). Any member can edit card contents such as descriptions, labels, dates, custom fields, checklists, etc.
If you want, you could submit a feature request for the team to review. In the meantime, it might be worth backing up your boards (e.g. this power-up might help).
That is terrible, I can not believe just Trello therefore I need to save every action aside too. Accidents happen and you shall address that.
