I want Members to be able to tick the boxes in the Checklist(which they already can), but I don't want them to be able to delete/edit anything, I just want them to be able to comment and tick boxes.
How would I do that ?

Sorry, but you can't do that. If a person has permission to change the value of a checkbox (a custom field), they also have permission to change the other content too.
If you were to give a person the 'Observer' role, they could view the card's content and add comments, but they would not be able to change the checkboxes.
