Christl from SendBoard here - makers of the Email for Trello Power-Up.

The syntax you shared looks correct, if you are using Trello's automation email (see Trello's help article here: Use Custom Fields in rules). You will just need to replace it with the actual custom field name  - make sure it matches exactly.

From the help article: To reference a Custom Field’s value in an action, use this format: {{%Field Name}} 

If you are using a Power-Up like Email for Trello, let me know because the variables differ slightly.
