Hello @Andrew Perez,
I am very sorry to hear about the security breach with your Gmail account and the unauthorized activity on your Atlassian profile. If there is indeed no way to reclaim your Gmail account and you wish to proceed with deleting your Atlassian account, I can assist with that.
Because you have active subscriptions (Goals, Projects, Teams, and Trello), our system requires these to be cancelled before the account can be fully deleted. Since you are having trouble doing this manually due to the connected apps, you will need to contact our Billing and Licensing team directly to clear these for you.
Step 1: Request Subscription Cancellation
Please follow these exact steps to submit a priority ticket to our Billing team:
Go to the Atlassian Support: Pricing, Billing, & Licensing | Atlassian.
Under "How can we help you?", choose "Your account".
Under "Choose a topic", select "Cancel Cloud subscription".
Click on "Need more help?" at the bottom.
In the text box, explain that your Gmail was hacked and you need all active subscriptions (Goals, Projects, Teams, and Trello) cancelled immediately so you can delete your account.
Click Submit.
Step 2: Delete Your Atlassian Account
Once the Billing team confirms that your subscriptions have been cancelled, you can proceed with deleting your account:
Log in to your Account settings at https://id.atlassian.com/manage-profile.
Select Account preferences from the left-hand navigation menu.
Scroll down to the Delete your account section and click the Delete account button.
Read the information regarding what happens to your data carefully, then click Delete account again to confirm.
Important Note: After you confirm, your account will enter a 14-day grace period. During this time, the account is deactivated and inaccessible. After 14 days, the deletion becomes permanent and cannot be undone.
Best,
Samuil

Tell your provider this too. Probably on community forums or chats.
Also I'd try DeleteMe app. For complete wipeout of all data once accesible of all your information.
All if you want more secure accessible messaging. Learn to do Java programming. Typically that I see. But depends on how you route your data.
